Curried Grilled Vegetable Wraps
Ingredients:
4 Simson’s Pantry Mixed Wholegrain wraps (heated as per packet instructions)
1 zucchini, sliced
1 small yellow capsicum, sliced
1 bunch asparagus
1 bunch spring onions
2 tsp. curry seasoning
1 tsp. olive oil
1 cup greek yoghurt
Handful of fresh mint leaves, roughly chopped
Handful fresh coriander leaves
Method:
- Grill vegetables with oil until tender. Sprinkle vegetables with curry seasoning and toss to coat.
- Combine the yoghurt with the mint leaves and mix well.
- Spread a dollop of the yoghurt mix on each wrap.
- Top with the grilled vegetables and coriander leaves. Wrap and enjoy!
