High Protein Chicken Enchiladas
Ingredients:
1 tbs extra virgin olive oil
1 brown onion, diced
2 cloves garlic, crushed
3 shredded, cooked chicken breasts
2 cups shredded Mexican cheese
6 x Simson’s Pantry Mexican Tortillas
Homemade Enchilada Sauce:
1 tbs extra virgin olive oil
1 brown onion, finely diced
2 cloves garlic, crushed
1 large tomato, diced
1 tsp chilli powder
1 tsp cumin
1 tsp dried oregano
Sprinkle salt and pepper
1 cup chicken stock
Juice of 1 lime
Method:
- Preheat your oven to 180 degrees fan forced and oil a large casserole dish.
- Prepare the enchilada sauce by heating the olive oil in a medium frying pan and adding the onion and garlic. Sauté until fragrant. Add the tomato, tomato paste, chilli powder, cumin, dried oregano, salt and pepper and cook for 2-3 minutes. Add the stock a
- Prepare the chicken by heating a large frying pan over medium heat. Add the onion and garlic and cook until fragrant. Add the shredded chicken and half of the enchilada sauce. Cook for 3-5 minutes and then remove from the heat.
