High Protein Chicken Fajitas
Ingredients:
2 chicken breasts, sliced into strips
2 garlic cloves, crushed
1 tsp cumin
1 tsp ground coriander
1 tsp oregano
1 tsp smoked paprika
½ tsp onion powder
Sprinkle salt and pepper
1 x each tri-colour capsicums (1 x red, 1 x green and 1 x yellow)
1 red onion, sliced
2 tbs extra virgin olive oil
To serve:
Simson’s Pantry Mexican Tortillas
Sliced Avocado
Shredded Mexican cheese
Lite Sour Cream
Lime quarters
Method:
- Line a large oven tray with baking paper and preheat your oven to 200 degrees fan forced. Combine in a mixing bowl the chicken, garlic, cumin, ground coriander, oregano, smoked paprika, onion powder, salt and pepper.
- Add the chicken, sliced capsicum and onion to the oven tray and spread out evenly. Drizzle with olive oil and bake for 20-25 minutes or until the chicken is cooked through.
- Meanwhile, warm the Simson’s Pantry Mexican Tortillas in a small hot pan for 30 seconds each side.
- Serve the chicken with warmed, chargrilled Tortillas, sliced avocado, shredded cheese, sour cream and lime.
