High Protein Chicken Fajitas
Ingredients: 
2 chicken breasts, sliced into strips
2 garlic cloves, crushed
1 tsp cumin
1 tsp ground coriander
1 tsp oregano
1 tsp smoked paprika
½ tsp onion powder
Sprinkle salt and pepper
1 x each tri-colour capsicums (1 x red, 1 x green and 1 x yellow)
1 red onion, sliced
2 tbs extra virgin olive oil
To serve:
Simson’s Pantry Mexican Tortillas
Sliced Avocado
Shredded Mexican cheese
Lite Sour Cream
Lime quarters
Method: 
  1. Line a large oven tray with baking paper and preheat your oven to 200 degrees fan forced. Combine in a mixing bowl the chicken, garlic, cumin, ground coriander, oregano, smoked paprika, onion powder, salt and pepper.
  2. Add the chicken, sliced capsicum and onion to the oven tray and spread out evenly. Drizzle with olive oil and bake for 20-25 minutes or until the chicken is cooked through.
  3. Meanwhile, warm the Simson’s Pantry Mexican Tortillas in a small hot pan for 30 seconds each side.
  4. Serve the chicken with warmed, chargrilled Tortillas, sliced avocado, shredded cheese, sour cream and lime.
