High Protein Mexican Breakfast Egg Tortillas
Ingredients:
½ tomato, chopped
¼ red onion, finely diced
½ cup spinach, chopped
3 eggs, whisked
½ cup grated mozzarella
1 x Simson’s Pantry Mexican Tortilla
½ avocado, sliced
Method:
- Heat a frying pan over medium heat. Add the tomatoes and red onion with a splash of olive oil, and cook until fragrant. Add the spinach and stir for a few minutes until wilted.
- Pour in the whisked eggs and add half the grated cheese on top, cook for 2-3 minutes. Place the Simson’s Pantry Mexican Tortilla on top of the eggs and flip it over with a spatula. Add the rest of the grated cheese, cover with a lid on and let the cheese
- Add the sliced avocado, fold the tortilla in half and remove from the pan. Cut in half and enjoy.
