High Protein Tofu Tacos
Ingredients:
300g firm tofu
2 tbs Mexican seasoning
2 tbs olive oil
1 x 6 pack Simson’s Pantry Street Tacos
1 baby cos lettuce, shredded
1 punnet mini tomatoes, quartered
1 red chilli, sliced
to serve: coriander, chipotle mayonnaise, lime quarters
Method:
- Cut tofu into cubes and sprinkle with Mexican seasoning.
- Heat oil in a fry pan over medium heat. Add tofu and cook, turning often, until all sides are browned.
- Serve tofu in a wrap with lettuce, tomatoes and chilli. Top with coriander and chipotle mayonnaise and serve with lime quarters.
