High Protein Zesty Fish Tacos
Ingredients: 
500g white fish of your choice (2 large fillets)
1 tsp cumin
1 tsp smoked paprika
½ tsp garlic powder
Sprinkle salt
6 x Simson’s Pantry Street Tacos
2 cups red cabbage, finely sliced
1 avocado, sliced
Handful of coriander, chopped
Creamy Jalapeño Sauce:
1 cup Greek yoghurt
2 tbs jalapeños, finely diced
1 clove garlic, crushed
Handful fresh coriander, chopped
Juice and zest of 1 lime
Sprinkle salt
Method: 
  1. Season the fish on both sides with cumin, garlic powder, smoked paprika and salt. In a large frypan over medium heat, add a drizzle of olive oil and cook the fish for 3-4 minutes each side or until cooked through.
  2. Meanwhile, warm the Simson’s Pantry Street Tacos in a small hot pan for 30 seconds each side and combine the ingredients for the Creamy Jalapeño Sauce.
  3. Break the fish into bite sized pieces for the tacos. Assemble the tacos by serving with the cabbage first, avocado, cooked fish, creamy jalapeño sauce and fresh coriander on top.
