High Protein Zesty Fish Tacos
Ingredients:
500g white fish of your choice (2 large fillets)
1 tsp cumin
1 tsp smoked paprika
½ tsp garlic powder
Sprinkle salt
6 x Simson’s Pantry Street Tacos
2 cups red cabbage, finely sliced
1 avocado, sliced
Handful of coriander, chopped
Creamy Jalapeño Sauce:
1 cup Greek yoghurt
2 tbs jalapeños, finely diced
1 clove garlic, crushed
Handful fresh coriander, chopped
Juice and zest of 1 lime
Sprinkle salt
Method:
- Season the fish on both sides with cumin, garlic powder, smoked paprika and salt. In a large frypan over medium heat, add a drizzle of olive oil and cook the fish for 3-4 minutes each side or until cooked through.
- Meanwhile, warm the Simson’s Pantry Street Tacos in a small hot pan for 30 seconds each side and combine the ingredients for the Creamy Jalapeño Sauce.
- Break the fish into bite sized pieces for the tacos. Assemble the tacos by serving with the cabbage first, avocado, cooked fish, creamy jalapeño sauce and fresh coriander on top.
