Low Carb Keto Chicken Enchiladas
Ingredients: 
3 chicken breasts
4 tbsp Mexican spice mix
2 cloves garlic, finely chopped
1 bunch fresh coriander, chopped
1 tin crushed tomatoes
8 Simson’s Pantry Low Carb Keto Supers Seeds wraps
1 cup grated tasty cheese
To serve, extra chopped coriander
Method: 
  1. Preheat oven to 180°C
  2. Steam chicken breast for 25 minutes, or until cooked through
  3. Shred chicken with a fork. Combine with Mexican spice mix, garlic, coriander and tomatoes
  4. Spread ⅛ of the mixture into the center of each Simson’s Pantry wrap, roll up and place in a baking dish
  5. Sprinkle with grated tasty cheese and bake in the oven for 25 minutes, or until the cheese has melted
  6. Serve sprinkled with extra chopped coriander
