Mini Wholemeal Wrap Quiches
Ingredients: 
6 Simson’s Pantry Wholemeal Mini Wraps
4 eggs
⅔ cup light cream or milk
1 cup grated tasty cheese
1 tbsp flour
1 tbsp olive oil
½ small onion, finely chopped
1 cup capsicum, finely diced
1 cup bacon, diced
6 cherry tomatoes, sliced in half
Method: 
  1. Preheat oven to 180°C (160°C fan-forced). Lightly grease a 6 x ¾ cup Texas muffin tray. Brush one side of a Mini Wholemeal Wrap with olive oil. Gently ease, oil side down into the pan. Repeat with 5 more wraps.
  2. Combine eggs, light cream or milk, cheese and flour. Whisk until evenly combined.
  3. Heat a little olive oil in a frying pan over a medium heat. Add onion and cook until soft. Add capsicum and bacon, cook for a further 2 minutes. Add the egg mixture.
  4. Pour approximately ½ cup of egg mixture into each wrap. Decorate with cherry tomatoes.
  5. Bake for 25 minutes or until quiches are set. Allow to rest for 5 minutes before removing from the pan.
