Protein-Packed Quinoa & Black Bean Wraps
Ingredients:
2 Simson's Pantry Mixed Wholegrain Wraps
1 cup cooked quinoa
½ cup black beans, rinsed and drained
½ cup salsa
½ cup tasty cheese
2 tbsp. fresh coriander, chopped
Method:
- Preheat oven to 180 degrees.
- Place wraps in foil and warm for 10 minutes while preparing quinoa and black beans.
- Place quinoa, black beans and salsa in a small saucepan and cook over medium heat until warmed through.
- Spread quinoa and black bean mixture over the warmed wraps.
- Sprinkle with cheese.
- Firmly roll up the wraps, cut in half and enjoy.
