Super Spinach Wraps with Red Rice and Zoodles
Ingredients:
1 tbs olive oil
1 onion, chopped
2 cloves garlic, finely diced
¾ cup basmati rice
2 tbs tomato paste
2 tsp smoked paprika
1 tsp turmeric
500ml chicken stock
4 Super Spinach & Herbs Wraps
½ cup store bought hummus
1 zucchini, spiralized
1 cup grated tasty cheese
Method:
- Heat olive oil in a frying pan.
- Add onion and garlic, cook until lightly browned.
- Add basmati rice, tomato paste, paprika and turmeric. Cook, stirring for 2 minutes.
- Add chicken stock and bring to a gentle simmer, stirring often for 15-20 minutes until stock has been absorbed and rice is cooked.
- Spread wraps with hummus on one half. Top with cooked red rice, zucchini zoodles and grated cheese.
- Fold in half and enjoy.
