Super Spinach Wraps with Red Rice and Zoodles
Ingredients: 
1 tbs olive oil
1 onion, chopped
2 cloves garlic, finely diced
¾ cup basmati rice
2 tbs tomato paste
2 tsp smoked paprika
1 tsp turmeric
500ml chicken stock
4 Super Spinach & Herbs Wraps
½ cup store bought hummus
1 zucchini, spiralized
1 cup grated tasty cheese
Method: 
  1. Heat olive oil in a frying pan.
  2. Add onion and garlic, cook until lightly browned.
  3. Add basmati rice, tomato paste, paprika and turmeric. Cook, stirring for 2 minutes.
  4. Add chicken stock and bring to a gentle simmer, stirring often for 15-20 minutes until stock has been absorbed and rice is cooked.
  5. Spread wraps with hummus on one half. Top with cooked red rice, zucchini zoodles and grated cheese.
  6. Fold in half and enjoy.
