Toasted Mini Quesadillas
Ingredients:
2 tomatoes, diced
½ red onion, diced
2 tbs finely chopped coriander
2 x 6 pack Simson’s Pantry Street Tacos
1 can re-fried beans
200g tasty cheese, grated
1 avocado, mashed with a fork
To serve: shredded lettuce, sour cream, lime quarters
Method:
- Combine tomatoes, red onion and coriander together in a mixing bowl. Set aside.
- Spread re-fried beans over one half of a wrap and top with a sprinkling of cheese. Repeat with remaining wraps. Fold wraps in half and toast in a sandwich press until the cheese has melted. Serve on a bed of shredded lettuce, topped with sour cream, avoca
